Pasty perfection

I had the great joy of making pasties today with dozens of devoted Finns at the Finnish Center Association in southeast Michigan. After potato peeling and dicing of many, many pounds of carrots and rutabaga the day prior, over 900 of the tasty delicacies were baked today. What an incredible example of teamwork!

A special machine presses out the dough balls into flattened ovals. The meat and veggie mixture is measured in scoops.

The pasties are assembled, crimped and placed on parchment-covered trays. A few fork pokes allow the steam to escape during baking.

The ovens are busy non-stop for 4-6 hours. After cooling, packaging follows.

Helena & Kathryn keep busy in the packaging area, while Yvonne & I take a break from assembly and crimping. Afterwards we enjoy every bite of the deliciousness.
