My favorite Pannukakku

Everyone has a favorite recipe for the custardy perfection of Pannukakku, a Finnish baked pancake. Here’s mine:

Preheat oven to 425 degrees. Put 1/4 lb. (1 stick) butter in 9x12 or jelly roll pan and place in preheating oven to melt.

In large bowl, beat 4 eggs

Add 1/3 C. sugar and beat

Add 2/3 C. flour & 1/4 tsp. salt

Add melted butter

Add 2 C. milk (whole best) and beat

Pour mixture in the pre-greased pan

Bake for 25-35 minutes or until golden brown and slightly firm.

Cut into squares and serve warm. Top with fresh berries, syrup, a berry jam, or other topping of choice. Great without toppings, too! Ideal for breakfast.
